Spicy peanut shrimp with rice noodles, cilantro, peanuts, and yogurt for a delicious Thai feast.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.75 white onion, chopped
  • 4 cloves garlic
  • 0.5 teaspoon red pepper flakes
  • 1 pound frozen shrimp, thawed
  • 2 (14.5 ounce) cans fire-roasted diced tomatoes
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon red chile paste, or more to taste
  • 1 (8 ounce) package wide rice noodles
  • hot water to cover
  • 0.25 cup chopped fresh cilantro, or to taste
  • 0.25 cup Greek-style yogurt, or to taste
  • 0.25 cup chopped peanuts, or to taste
Instructions:
  • In a large pan or skillet over medium heat, warm up vegetable oil. Saute onion, garlic, and red pepper flakes until garlic is lightly browned, for about 2 to 3 minutes. Introduce shrimp into the pan; cook and stir until shrimp start to firm up, approximately 5 minutes.
  • Combine the tomatoes, peanut butter, and red chile paste with the shrimp mixture, then bring to a boil. Simmer on low heat until the sauce thickens, approximately 20 minutes.
  • In a large bowl, soak noodles in hot water until softened, around 15 minutes. Drain and rinse well before using.
  • Plate the noodles and generously spoon the flavorful shrimp sauce on top. Finish by delicately garnishing each dish with fresh cilantro, creamy yogurt, and crunchy peanuts.
