Easy and delicious shrimp and scallop stir-fry with veggies over rice for a quick meal.
Ingredients:
  • 2 tablespoons butter, divided
  • 1 pound fresh asparagus, cut into 2-inch pieces
  • 2 cups sliced fresh mushrooms
  • 1 small onion, sliced
  • 0.5 pound medium raw shrimp, peeled and deveined
  • 0.5 pound raw scallops
  • 2 cloves garlic, minced
  • 1 tablespoon dried parsley
  • 0.5 teaspoon ground black pepper
  • 3 tablespoons lemon juice
Instructions:
  • In a large skillet over medium heat, melt 1 tablespoon of butter. Stir-fry asparagus, mushrooms, and onion until tender but still slightly crunchy, about 5 minutes. Plate and serve.
  • In the same skillet, melt the rest of the butter. Quickly sauté the shrimp and scallops until almost cooked through, which should take around 2 minutes. Add the garlic, parsley, salt, and pepper, and cook for an additional minute.
  • Add the cooked vegetables back to the skillet and mix in the fresh lemon juice. Continue cooking and stirring until everything is heated through, which should take around 2 to 3 minutes.
