Delicious shrimp burritos with spiced beans, cumin rice, chipotle sauce, cheese, salsa, and seared shrimp.
Ingredients:
  • cooking spray
  • 2 tablespoons vegetable oil
  • 0.5 cup chopped onion
  • 0.75 cup long-grain white rice
  • 0.75 teaspoon garlic salt
  • 0.75 teaspoon cumin
  • 1.5 cups chicken broth
  • 0.5 cup canned diced tomatoes
  • 0.5 cup plain yogurt
  • 0.5 cup mayonnaise
  • 2 teaspoons pureed chipotle peppers in adobo sauce
  • 1 (16 ounce) can refried beans
  • 0.5 teaspoon ground black pepper
  • 12 ounces frozen cooked shrimp without tails, thawed
  • 2 teaspoons minced garlic
  • 1.5 cups shredded Cheddar cheese, or to taste
  • 6 (10 inch) flour tortillas, warmed
  • 0.33333334326744 cup salsa, or to taste
Instructions:
  • Prepare flavorful rice: Heat oil in a saucepan over medium heat. Sauté onion until tender. Add rice, garlic salt, and cumin, and cook until lightly toasted, about 5 minutes. Stir in broth and tomatoes, bring to a boil, then reduce heat, cover, and simmer until liquid is absorbed, 15 to 20 minutes.
  • Prepare chipotle sauce by combining yogurt, mayonnaise, and chipotle peppers in a small bowl until creamy. Chill until needed.
  • Combine refried beans, garlic salt, and black pepper in a small saucepan and cook over low heat, stirring occasionally, until heated through.
  • Heat a skillet over medium-high heat and coat with cooking spray. Combine shrimp and garlic in a large bowl. Sauté the shrimp mixture in the hot skillet until heated through and lightly browned.
  • Create delicious burritos by layering 1/4 cup of cheese on each warm tortilla, evenly distributing shrimp on top. Add about 1/4 cup of beans and rice on each one. Finish with your preferred amount of chipotle sauce and salsa. Roll up like a burrito and enjoy!
