Spooky shrimp salad, claw-shaped, perfect for Halloween dinner.
Ingredients:
  • 1/4 cup seafood seasoning
  • 3 lb uncooked medium shrimp in shells
  • 3/4 cup finely chopped celery
  • 1/2 cup finely chopped onion
  • 1/3 cup mayonnaise
  • 2 tablespoons capers, drained
  • 2 teaspoons grated lemon peel
  • 2 tablespoons lemon juice
  • 3/4 teaspoon lemon-pepper seasoning
  • Chopped avocado, if desired
  • Chopped fresh cilantro, if desired
Instructions:
  • In a Dutch oven, bring 12 cups of water and seafood seasoning to a boil. Add shrimp and cook uncovered for 3 to 5 minutes until they turn pink. Drain the shrimp.
  • Prepare the shrimp by peeling them, leaving the tails on, and making a shallow lengthwise cut down the back of each shrimp to remove the vein. Chop the remaining shrimp. In a large bowl, combine the chopped shrimp with all the other ingredients, excluding the avocado and cilantro. Cover and refrigerate for 2 hours. Remember to chill the shrimp with tails separately.
  • Distribute shrimp salad into 8 footed serving dishes. Top with avocado and cilantro. Decorate by placing 3 reserved shrimp with tails hanging around the rim of each dish to resemble claws.
