Delicious creamy shrimp corn chowder with crispy bacon garnish - perfect for any night!
Ingredients:
  • 6 slices bacon
  • 1 cup chopped onion
  • 0.5 cup chopped celery
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh thyme
  • 4 cups frozen corn kernels, thawed
  • 2 cups chicken broth
  • 0.5 cup half-and-half
  • 0.5 teaspoon black pepper
  • 1 pound fresh peeled and deveined shrimp
Instructions:
  • Fry bacon in a large skillet over medium-high heat, flipping occasionally, until perfectly browned, approximately 10 minutes. Place the crispy bacon slices on a paper towel-covered plate. Dispose of any extra grease.
  • Crumble 4 slices of bacon into the skillet and cook over medium heat with onion, celery, garlic, and thyme until vegetables are soft, about 5 minutes. Transfer mixture to a large pot and add corn and chicken broth. Bring to a boil and simmer until flavors combine, about 5 minutes.
  • Blend 2 cups of soup in a blender until smooth while ensuring the lid is secure. Pour the puréed soup back into the pot and mix in half-and-half, salt, and pepper. Bring the mixture to a boil, then add shrimp and cook until they are opaque, which should take about 3 to 4 minutes.
  • Serve the soup in bowls and sprinkle the remaining 2 slices of bacon on top for added flavor and crunch.
