Elevate your appetizer spread with delectable shrimp deviled eggs!
Ingredients:
  • 6 eggs
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 1/4 cup reduced-fat mayonnaise or salad dressing
  • 1 tablespoon white vinegar
  • 1/4 teaspoon red pepper sauce
  • 1/2 cup coarsely chopped cooked salad shrimp, thawed if frozen
  • 1 tablespoon seafood cocktail sauce
Instructions:
  • Place the eggs in a single layer in a 2-quart saucepan, ensuring there is at least 1 inch of cold water covering them. Bring to a boil, then remove from heat, cover, and let sit for 18 minutes. Drain the hot water, rinse the eggs with cold water, and then let them rest in ice water for 10 minutes.
  • Peel eggs and cut them in half lengthwise. Remove the yolks and place them in a bowl. Mash the yolks with a fork until smooth. Set aside 1 teaspoon of the green onions for garnish. Mix in mayonnaise, vinegar, salt, pepper sauce, and the rest of the green onions to the mashed yolks. Gently fold in the shrimp. Garnish with the reserved green onions.
  • Generously stuff egg whites with creamy yolk mixture. Finish by garnishing with zesty cocktail sauce and a sprinkle of fresh green onions right before serving.
