Shrimp in Tomato Sauce over Pasta

Try a flavorful homemade sauce from Prevention® Healthy Cooking.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small bunch scallions, chopped
  • 2 garlic cloves, minced
  • 1 can (28 ounces) crushed tomatoes
  • 3/4 cup dry white wine or nonalcoholic white wine
  • 1 tablespoon sugar
  • 3/4 cup chopped flat-leaf parsley or basil
  • 12 fresh or frozen and thawed jumbo shrimp, peeled and deveined
  • 8 ounces spaghetti
  • 1/4 cup grated Parmesan cheese
Instructions:
  • In a medium saucepan over medium heat, gently warm up oil. Add scallions and garlic, cooking for 10 minutes until scallions start to turn golden brown.
  • Combine luscious tomatoes, flavorful wine, a hint of sugar, and 1/2 cup of fresh parsley or basil. Bring to a boil, then simmer covered on low heat for 20 to 25 minutes until the sauce reaches the perfect thickness.
  • Add the shrimp back to the skillet and cook for 4 to 5 minutes, or until the shrimp turn opaque.
  • Cook the spaghetti as directed on the package. Drain the spaghetti and transfer it to a large bowl. Mix in the sauce by tossing it together.
  • Generously dust with Parmesan cheese and the remaining 1/4 cup of fresh parsley or basil.
