Artichoke, tomato, and caper sauce over shrimp and whole-wheat pasta, topped with tangy goat cheese - a delightful and refreshing dinner option.
Ingredients:
  • 0.5 (16 ounce) package whole wheat rotini pasta
  • 2 teaspoons olive oil
  • 3 green onions, slivered
  • 1 (8 ounce) jar quartered marinated artichoke hearts, drained
  • 1 (14.5 ounce) can no-salt-added whole tomatoes, undrained and chopped
  • 2 tablespoons capers
  • 0.25 teaspoon chipotle chile powder
  • 1 pound large shrimp, peeled and deveined
  • 0.33333334326744 pound crumbled goat cheese
Instructions:
  • 1. Boil a large pot of salted water. Cook the rotini until al dente, about 8 minutes. Drain.
  • In a large skillet over medium heat, sauté green onions and garlic in olive oil until tender, about 4 minutes. Add artichokes, tomatoes, capers, and chipotle chile powder and bring to a boil. Lower the heat and simmer. Add shrimp to the sauce and cook until they turn bright pink and are no longer translucent in the center, about 5 minutes.
  • Evenly distribute the pasta among 4 bowls. Add shrimp and tomato sauce on top. Sprinkle goat cheese over the sauce.
