Summer vegetable pasta dish with shrimp.
Ingredients:
  • 1 (16 ounce) package rigatoni pasta
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 3 cloves garlic, crushed
  • 1 small zucchini, sliced
  • 1 small yellow squash, sliced
  • 1 green bell pepper, sliced
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes
  • 2 pounds shrimp, peeled and deveined
Instructions:
  • 1. Boil a generously salted large pot of water. 2. Add rigatoni to the boiling water and stir occasionally until al dente, about 13 minutes. 3. Drain the pasta.
  • In a skillet over medium heat, sauté onion and garlic in vegetable oil until onion is tender, about 5 minutes. Add zucchini, yellow squash, bell peppers, and mushrooms; cook until vegetables are tender, about 5 more minutes. Stir in tomatoes, oregano, basil, red pepper flakes, salt, and black pepper; simmer briefly.
  • Sauté shrimp in vibrant vegetable sauce until they turn opaque and bright pink, approximately 5 minutes. Serve over rigatoni.
