Effortless shrimp stir-fry with quick-frozen veggies. Ready in under 30 minutes.
Ingredients:
  • 1 cup chicken stock
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon cornstarch
  • salt and ground black pepper to taste
  • 3 tablespoons sesame oil
  • 1 (16 ounce) package frozen stir-fry vegetables
  • 20 uncooked medium shrimp, peeled and deveined
Instructions:
  • Combine flavorful chicken stock, umami-rich soy sauce, thickening cornstarch, and aromatic garlic in a bowl; generously season with salt and pepper to enhance the taste.
  • In a large skillet over medium-high heat, heat sesame oil until it shimmers. Sauté vegetables in the hot oil until softened, about 4 minutes. Then, add shrimp and continue to cook until they start to turn pink, approximately 3 minutes.
  • Combine the chicken stock mixture with the vegetable-shrimp mixture and cook while stirring until everything is coated and the sauce thickens, approximately 5 more minutes.
