Margarita Shrimp Stir-Fry

Transform frozen margarita mix into a tantalizing shrimp marinade.
Ingredients:
  • 1/2 cup frozen (thawed) margarita mix
  • 1 teaspoon grated lime peel
  • 1/2 lb uncooked peeled deveined medium shrimp, thawed if frozen, tail shells removed
  • 1 tablespoon butter or margarine
  • 1/2 medium green bell pepper, cut into thin strips
  • 1/2 medium red bell pepper, cut into thin strips
  • 1 tablespoon finely chopped cilantro
  • 1 cup uncooked instant white rice
  • 1 cup water
Instructions:
  • Combine margarita mix and lime peel in a small bowl. Set aside 2 tablespoons of the mixture. Add shrimp to the remaining mixture and mix well to coat. Cover and refrigerate for 30 minutes.
  • In a 10-inch nonstick skillet, heat butter over medium-high heat until melted. Add green and red bell peppers and cook for 2 to 4 minutes, stirring occasionally, until crisp-tender.
  • Dredge shrimp from marinade and discard. Add shrimp to the skillet mixture and cook for 1 to 2 minutes until pink and firm, stirring occasionally. Mix in 2 tablespoons of reserved sauce and cilantro and cook until heated through.
  • Prepare the rice according to package instructions. Serve the flavorful stir-fry on top of the rice.
