Lime, tequila, and cilantro marinated shrimp appetizers, perfect for a quick and zesty toast with friends.
Ingredients:
  • 1/4 cup finely chopped green onions
  • 1/4 cup oil
  • 1/4 cup tequila
  • 1 teaspoon grated lime peel
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1 lb. (about 30) large tiger (striped) shrimp, shelled, tails left on and deveined
Instructions:
  • Combine all ingredients except shrimp in a medium bowl, mixing well. Add the shrimp and stir to coat. Refrigerate, covered, for at least 4 hours or up to 8 hours to marinate.
  • Prepare the broiler pan by coating it with nonstick cooking spray. Drain the shrimp, discard the marinade, and arrange the shrimp on the prepared broiler pan. Broil the shrimp 4 inches from the heat source for 5 to 7 minutes, turning them once, until they turn pink.
