Elevate dishes with zesty Southwest vegetable blend.
Ingredients:
  • 1 cup canned (drained) or frozen (thawed) whole kernel corn, drained
  • 2/3 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons lime juice
  • 1 medium avocado, peeled, pitted and cut into bite-size pieces (1 cup)
  • 1 garlic clove, finely chopped
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
Instructions:
  • Combine all the fresh, flavorful ingredients until well blended.
  • Chill in the refrigerator, covered, for 1 hour to let the flavors meld. Keep covered in the fridge for up to 2 days.
