Whip up a flavorful Southwestern chicken chili with cubed chicken, spices, cannellini beans, corn, and melty Cheddar cheese. Delicious and simple!
Ingredients:
  • 1 tablespoon vegetable oil
  • 4 (4 ounce) skinless, boneless chicken breast halves, cut into cubes
  • 1 large onion, chopped
  • 1 medium green pepper, chopped
  • 4 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 (15 ounce) cans white kidney beans (cannellini), rinsed and drained
  • 1.5 cups frozen whole kernel corn
  • 1 (10.75 ounce) can Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 0.75 cup water
  • 2 tablespoons shredded Cheddar cheese
Instructions:
  • In a 4-quart saucepan over medium-high heat, sizzle the oil and combine chicken, onion, bell pepper, chili powder, and cumin. Stir frequently until the chicken is fully cooked and the veggies are tender.
  • Combine beans, corn, condensed soup, and water in a saucepan and bring to a boil. Simmer on low heat, covered, for 5 minutes, stirring occasionally. Finish with a sprinkle of Cheddar before serving.
