Try quick and delicious microwave shrimp nachos with zesty cocktail sauce for a twist on a classic Mexican dish. Perfect for snacking or serving as elegant hors d'oeuvres.
Ingredients:
  • 1 medium tomato, seeded, finely chopped (3/4 cup)
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons seafood cocktail sauce
  • 1/2 teaspoon red pepper sauce
  • 30 scoop-shaped tortilla chips
  • 2/3 cup finely shredded Mexican cheese blend (5 oz)
  • 30 cooked small deveined peeled shrimp, thawed if frozen, tail shells removed
Instructions:
  • Combine fresh, ripe tomatoes, diced onions, fragrant cilantro, zesty cocktail sauce, and a splash of pepper sauce in a small bowl. Allow the flavors to meld together while you prepare the rest of the dish.
  • Divide tortilla chips onto 2 microwavable plates. Top each chip with 1 teaspoon of cheese. Microwave 1 plate at a time on High for about 30 seconds until cheese is melted. Repeat with second plate.
  • Right before serving, generously spoon 1 rounded teaspoon of zesty tomato salsa over each nacho and crown it with a succulent shrimp.
