Try this quick and tasty Sichuan pork with fried rice for an Asian-inspired dinner in 30 minutes.
Ingredients:
  • 1 pound pork boneless loin
  • 1 tablespoon vegetable oil
  • 2 medium carrots, chopped (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 1 small green or red bell pepper, chopped (1/2 cup)
  • 3 cups cold cooked rice
  • 1/4 cup Sichuan (Szechuan) stir-fry sauce
  • 1 cup bean sprouts
Instructions:
  • Slice pork thinly. For easier slicing, place it in the freezer for 30 to 60 minutes. Heat oil in a skillet over medium-high heat. Cook pork in hot oil for 3 to 5 minutes until nicely browned, stirring occasionally.
  • Cook the carrots, onion, and bell pepper together for about 5 minutes, stirring occasionally, until the vegetables are crisp-tender.
  • Mix the rice and stir-fry sauce together until thoroughly combined. Add the bean sprouts and cook for about 5 minutes, occasionally stirring, until heated through.
