Sicilian roasted cauliflower & Brussels sprouts

Elevate Brussels sprouts by adding cauliflower for a flavorful and sweet twist when roasted with spices.
Ingredients:
  • 50 g pine nuts
  • 1 large head of cauliflower
  • 300 g Brussels sprouts
  • 50 g raisins
  • 12 strands of saffron
  • garlic oil
Instructions:
  • - Preheat the oven to 200°C/400°F/gas 6. Roast pine nuts on a baking tray until golden. Set aside to cool. Trim cauliflower and cut into florets. Halve Brussels sprouts. Soak raisins in boiling water for 20 minutes, then drain. Place cauliflower, sprouts, saffron, 2 tbsp olive oil, and 2 tbsp garlic oil in a roasting pan. Roast for 25 to 30 minutes. Transfer to a bowl, add pine nuts and raisins. Season, stir gently, and serve.
