Easy Halloween birthday cake using cake mix, frosting, and Fruit Roll-Ups.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 3 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • Neon orange food color
  • 2 rolls Betty Crocker™ Blastin' Berry Fruit Roll-Ups® chewy fruit snack (from 5-oz box)
  • 3 to 4 pieces black string licorice
  • Small black gumdrop
  • 2 sugar-style ice cream cones with pointed ends
  • 2 wooden skewers (4 inch)
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pans) and generously grease the bottoms and sides of 2 (8-inch) round cake pans with shortening or cooking spray.
  • Prepare and bake the cake mix following the instructions on the box for 8-inch round pans, using water, oil, and eggs. Let the cakes cool for 10 minutes, then carefully remove them from the pans onto cooling racks. Allow the cakes to cool completely, approximately 1 hour. For easier handling, chill or freeze the cakes for 30 minutes to 1 hour until firm.
  • In a medium bowl, combine 2 containers of frosting with orange food color until evenly tinted. Place the first cake layer, rounded side down, on a serving plate. Spread 1 cup of the orange frosting over the layer. Add the second cake layer, rounded side up. Apply a thin layer of orange frosting all over the cake to seal in crumbs. Chill in the refrigerator or freezer for 30 minutes to 1 hour.
  • Spread orange frosting on top and sides of cake, using the back of a spoon to create a textured finish.
  • Spread a generous layer of vanilla frosting over the cookie to create the eyeball. Unwrap a fruit snack, cut out a small circle for the eye and teeth for the mouth. Place the fruit snack circle in the center of the eye and top it with a gumdrop. Spread more vanilla frosting to create the mouth and add a fruit roll-up for the teeth. Decorate with black licorice outlining and add lashes to the eye.
  • Unroll the remaining fruit snack and wrap it around the ice cream cone. Insert skewers at the top of the cake and attach the cones to resemble horns.
