Total Time:
Spicy bacon and chili pepper pasta sauce with garlic, red onion, tomatoes, and Parmesan cheese. Serve over pasta and sprinkle with extra Parmesan.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 6 slices bacon
  • 0.5 teaspoon chopped garlic
  • 3 tomatoes, chopped
  • 1 green chile peppers, diced
  • 4 leaves fresh basil
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Cook the penne pasta in a large pot of boiling salted water until it's perfectly al dente. Make sure to drain it well.
  • In a skillet, cook bacon strips until slightly cooked but not crispy. Remove from pan, break into bite-sized pieces. Discard excess grease. Return bacon to pan, add minced garlic, red onion, olive oil, and chili pepper. Cook until onion is soft, about 5 minutes. Add chopped tomatoes, 1/2 cup Parmesan cheese, and fresh basil. Simmer for 10 minutes.
  • Combine all ingredients in a large bowl, sprinkle with extra grated Parmesan on top, and enjoy over freshly cooked pasta.
