Sarah_Random's sweet and tender roast pumpkin is the perfect addition to your Sunday dinner.
Ingredients:
  • 1kg piece peeled pumpkin, cut into 4cm pieces
  • 36.40 gm olive oil
  • 1 tsp fresh rosemary
  • Salt, to taste
  • Cracked peppercorns, to taste
Instructions:
  • Preheat your oven to 210C (190C fan-forced) and line a large baking tray with baking paper.
  • Combine pumpkin with fragrant rosemary-infused oil, ensuring each piece is seasoned to perfection with a sprinkle of salt and pepper before laying them out in a uniform layer on the baking tray.
  • Bake pumpkin pieces for 30 minutes, then flip them and bake for another 30 minutes until golden brown and tender.
