Simple Salmon Cakes Made with Oatmeal

Crispy oatmeal salmon patties fried to perfection in a blend of canola oil and butter.
Ingredients:
  • 2 (6 ounce) cans boneless, skinless salmon, drained
  • 1 large egg, beaten
  • 2 tablespoons chopped onion, or more to taste
  • 0.75 cup quick-cooking oats, or as needed
  • 2 tablespoons canola oil, or to taste
Instructions:
  • Combine salmon, egg, and onion in a bowl, using your hands to mix thoroughly. Gradually incorporate oats until the mixture is cohesive and not too wet. Form the mixture into four patties.
  • In a large skillet over medium heat, melt butter in oil until sizzling. Fry patties until golden brown and cooked through, about 7 minutes per side.
