Juicy baked salmon in tangy balsamic glaze with fresh parsley for a delectable main dish.
Ingredients:
  • 4 (4 ounce) skinless, boneless salmon fillets
  • 0.5 cup vegan margarine (such as Smart Balance®), melted
  • 1 lemon, halved
  • 0.25 cup balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons white sugar
  • 0.5 teaspoon minced garlic
  • 0.5 cup chopped fresh parsley
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Coat both sides of the salmon fillets in luscious melted margarine, then arrange them in a baking dish. Drizzle freshly squeezed lemon juice evenly over each fillet.
  • Combine balsamic vinegar, soy sauce, sugar, and garlic in a bowl, whisk until well blended. Gently pour over salmon fillets. Sprinkle with parsley and pour any remaining sauce over the fillets.
  • Bake the fish in the preheated oven for 30 minutes until opaque and flakes easily. Rest covered with aluminum foil for 3 minutes prior to serving.
