Soft sugar cookies, reminiscent of childhood treats. Versatile for any occasion, whether plain, frosted, or decorated with colored sugars. Perfect for celebrations or sharing with friends.
Ingredients:
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
Instructions:
  • Cream the butter, sugars, and vanilla: In the bowl of a stand mixer fitted with a paddle attachment, combine the butter, both sugars, and vanilla extract. Beat until the mixture is light, fluffy, and sticks to the sides of the bowl.
  • Incorporate the egg by beating it while scraping down the sides of the bowl with a spatula.
  • Combine the flour, baking powder, and salt in the mixing bowl. Mix on low speed until the dry ingredients are almost fully mixed, then increase the speed until well combined.
  • Allow the dough to rest and develop flavors by refrigerating for at least 1 hour or overnight.
  • Begin by preheating your oven to 375°F (190°C about 30 minutes before baking the cookies. Prepare a baking sheet by lining it with a silicon baking mat or parchment paper.
  • Create cookie rounds: Grab a chunk of dough and roll it into a 1 1/2-inch ball, aiming for a ping pong ball's size. Coat the ball with granulated white sugar and set it on the baking sheet. Continue with the rest of the dough, ensuring each ball is 2 inches apart on the sheet.
  • Flatten the cookie dough into thick 2-inch wide disks using the bottom of a glass, then sprinkle each disk with extra sugar.
  • For the most delicious cookies, bake at 375°F (190°C) for 11 to 13 minutes until the edges turn golden brown. Allow them to cool for 10 minutes on the baking sheet, then transfer to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.
