Deliciously soft gluten-free snickerdoodle cookies with a crisp cinnamon-sugar coating.
Ingredients:
  • 1.3333333730698 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon baking soda
  • 0.5 cup butter at room temperature
  • 1 cup sugar, divided
  • 1 egg
  • 1.5 teaspoons ground cinnamon
Instructions:
  • Preheat the oven to 350°F (180°C) and prepare 2 baking sheets with parchment paper.
  • In a bowl, mix together flour, baking powder, salt, and baking soda.
  • In a separate bowl, use an electric mixer to whisk together butter and 3/4 cup of sugar until soft and creamy, about 2 minutes. Add an egg and whisk until well combined. Gradually add the flour mixture while whisking on low speed until a soft dough forms, about 2 minutes. Shape the dough into 1 1/2-inch balls.
  • Combine the remaining 1/4 cup of sugar with cinnamon in a bowl, roll the balls in the cinnamon mixture, and place them on the prepared baking sheets.
  • Bake until edges turn golden, about 12 to 15 minutes. Let cool on the baking sheet for 1 minute before transferring to a wire rack to cool completely.
