Simple spinach and ricotta pasta

Ingredients:
  • 250.00 ml frozen spinach, defrosted
  • 1 onion, sliced or chopped
  • 1 jar tomato pasta sauce
  • 240.00 gm ricotta cheese
  • 500g large spiral pasta, cooked to packet instructions
  • 250.00 ml tasty cheese, grated
  • Fresh basil, to taste
Instructions:
  • Warm up the oil in a spacious frying pan.
  • Heat to medium, then add the spinach, onion, and garlic. Sauté for about 5 minutes, stirring occasionally.
  • Simmer gently and fold in pasta sauce until it melds with spinach and onion.
  • Stir in the ricotta cheese off the heat.
  • Transfer the cooked pasta to a large mixing bowl. Pour the spinach and ricotta mixture over the pasta and mix well. Sprinkle grated cheese on top and quickly stir to evenly distribute it throughout the pasta.
  • Sprinkle with fresh basil leaves before serving.
