Simple steamed fish

Mediterranean-inspired white fish dish, perfect for a romantic dinner. Easy to adjust for smaller portions.
Instructions:
  • Generously season the fish with sea salt and set aside. Heat a large shallow casserole pan and add 2 tablespoons of olive oil. Chop the peppers into 2cm chunks and add to the pan along with the sliced leeks. Cook for 15 minutes until golden, stirring occasionally. Prepare a paste with oregano, salt, orange juice, red wine vinegar, and extra virgin olive oil. Rinse and dry the fish, then place it in the pan with the vegetables. Add orange juice and water, cover, and cook for 7 minutes. Drizzle the orange dressing over the dish before serving.
