Delicious mango salad to pair with steamed fish during mango season.
Ingredients:
  • 42.00 gm lime juice, plus wedges to serve
  • 48.80 gm fish sauce
  • 40.00 gm caster sugar
  • 2 small red chillies, seeded, finely sliced
  • 2 firm mangoes (use green mangoes if available), peeled, coarsely grated
  • 4 x 100g skinless ocean trout fillets
  • 250.00 ml coriander leaves, chopped
  • 82.50 ml chopped mint leaves
  • 82.50 ml roasted macadamias, chopped
Instructions:
  • Combine freshly squeezed lime juice, umami-rich fish sauce, sweet sugar, and spicy chili in a secure screw-top jar. Drizzle the zesty dressing over ripe mango in a bowl.
  • Steam the fish on a plate over simmering water for about 5 minutes until cooked but still slightly rare in the center. Mix herbs with mango. Place a piece of fish on each plate, top with salad, sprinkle with nuts, and serve with lime wedges.
