Simple Tuna Fish Tacos

Delicious tuna tacos with pantry staples, topped to your liking.
Ingredients:
  • 1 tablespoon olive oil
  • 4 Roma tomatoes, diced
  • 4 green onions, sliced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 3 dashes hot sauce (such as Tabasco®)
  • 4 (6 ounce) cans solid white tuna packed in water, drained
  • 1 pinch red pepper flakes
  • 12 corn tortillas
Instructions:
  • In a skillet, warm olive oil over medium heat. Combine tomatoes, green onions, garlic, cumin, and oregano; cook until tomatoes are very soft, around 5 minutes. Lower the heat. Mix in drained tuna, gently breaking it into bite-sized pieces. Season with red pepper flakes, salt, and pepper. Cover and cook until the tuna is heated through, for 2 to 3 minutes.
  • Place 6 tortillas on a microwave-safe plate and cover with a damp paper towel. Microwave for 15 to 20 seconds until soft and pliable. Repeat with remaining tortillas before spooning tuna mixture over the warmed tortillas.
