Simple tuna pilaf

Quick and delicious tuna pilaf, ideal for busy weeknights or office lunches.
Ingredients:
  • 300.00 gm\tbasmati rice
  • 765.00 gm vegetable stock or chicken stock
  • 250.00 ml\t brand frozen baby peas
  • 250.00 ml frozen corn kernels
  • Coles brand tuna in oil
  • 40.00 ml parsley, chopped
Instructions:
  • In a large saucepan, heat oil over medium heat. Cook onion for 5 minutes until soft, stirring occasionally. Add rice and cook for 1 minute until grains are glassy, stirring constantly.
  • Pour in the stock, cover with a tight-fitting lid, and gently bring to a simmer. Lower the heat and let it cook for 10 minutes. Uncover briefly to add peas and corn, then cover and cook for another 10 minutes. Remove from heat and let it stand, still covered, for 5 minutes before serving.
  • Flake the drained tuna with a fork, gently mix it with rice and parsley, and serve immediately.
