Tuna pilau

Flavorful one-pot tuna pilau, perfect as a standalone dish or for an Indian feast.
Ingredients:
  • 20.00 ml olive sunflower oil
  • 1 onion, chopped
  • 28.00 gm mild curry paste (such as korma)
  • 1 tsp ground turmeric
  • 1 red capsicum, finely chopped
  • 10-12 fresh curry leaves*
  • 300g basmati rice
  • 750ml vegetable stock
  • 21.00 gm lemon juice
  • 425g can tuna in chilli oil, drained
  • 60g snow peas, thinly sliced
  • Mango chutney, to serve (optional)
  • Indian pickle, to serve (optional)
Instructions:
  • Warm the oil in a spacious frying pan over gentle heat.
  • Saute onion and garlic until softened, around 2-3 minutes. Stir in curry paste and turmeric, cook until aromatic. Mix in capsicum, curry leaves, and basmati rice. Pour in stock and lemon juice, then simmer until flavors meld.
  • Cover and simmer over low heat for 10 minutes, allowing the liquid to be fully absorbed. Gently mix in the tuna and snow peas until well combined.
  • Garnish tuna pilau with chutney and pickles for added flavor and variety, if preferred.
