Versatile and aromatic dish with options to customize - swap edamame for lima beans, tuna for another fish, or add fresh herbs for extra flavor. Get creative and savor the delicious results!
Ingredients:
  • 1 cup uncooked brown rice
  • 2 cups water
  • 1 onion, chopped
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper, divided
  • 1 cup frozen shelled edamame (green soybeans)
  • 4 (4 ounce) tuna steaks
  • 0.25 teaspoon salt
  • 1 bulb shallots, peeled and chopped
  • 0.75 cup water
  • 1 tablespoon minced fresh chives
  • 0.25 teaspoon grated orange zest
  • 1 tablespoon orange juice
Instructions:
  • In a pot, combine the rice with 2 cups of water and bring it to a delightful boil. Then, cover the pot, lower the heat to a gentle simmer, and let it cook for 45 minutes.
  • In a skillet over medium heat, warm up 1 tablespoon of olive oil. Add the onion and cook until tender. Season with thyme and 1/4 teaspoon of pepper, then gently fold into the cooked rice.
  • In a separate pot, simmer the edamame in enough water to cover them until tender, about 5 minutes. Then, fold them into the rice.
  • Heat the remaining olive oil in a skillet. Season the tuna with the remaining 1/4 teaspoon of pepper and salt. Sear the tuna in the skillet until cooked to your liking. Set aside and keep warm.
  • In a skillet, sauté shallots until golden. Pour in 3/4 cup water and simmer until reduced by half. Add chives, orange zest, and orange juice. Serve fish over rice and drizzle with the flavorful sauce.
