Whip up a quick and delicious twist on fried rice for an easy and fabulous dinner tonight.
Ingredients:
  • 350g brown rice (or use 4 cups leftover cooked rice)
  • 36.40 gm olive oil
  • 8 bacon rashers, rind removed, diced
  • 1 garlic clove, crushed
  • 250.00 ml fresh peas or frozen peas
  • 210g can tuna in chilli oil, drained (see Notes)
  • 125.00 ml spring onions, finely sliced, plus extra to serve
  • 60ml soy sauce
Instructions:
  • Simmer rice in seasoned boiling water until tender, then strain and cool with cold water.
  • In a hot wok, crisp the bacon in oil and transfer to a paper towel-lined plate to drain.
  • Toss rice and garlic into the wok, stir-fry for 1 minute, then add peas, tuna, spring onions, cooked bacon, and soy sauce. Stir-fry until heated through.
  • Garnish with additional soy sauce and fresh spring onions before serving.
