Creamy vegan split pea soup with onions, carrots, and celery - a comforting winter meal.
Ingredients:
  • 1 cup dried split peas
  • 5 cups cold water
  • 0.25 cup diced onion
  • 0.25 cup thinly sliced celery
  • 1 tablespoon ketchup
  • 1 tablespoon extra-virgin olive oil
  • 1 pinch coarse salt
  • 2 cloves garlic, crushed, or more to taste
  • 3 bay leaves, or more to taste
  • 1 cup sliced carrots, or more to taste
  • ground black pepper to taste
Instructions:
  • Thoroughly check peas for any debris or blemished peas. Rinse peas in a fine mesh strainer under cold running water to remove any dust.
  • In a heavy-bottomed pot with a lid, combine drained peas, water, onion, celery, ketchup, olive oil, salt, garlic, and bay leaves. Bring to a boil over medium-high heat, then reduce to a very slow simmer. Stir and scrape the bottom every 7 to 12 minutes and cook until peas have mostly fallen apart, about 1 1/2 hours.
  • Incorporate the carrots into the soup and let it simmer covered, stirring occasionally, until the peas fully dissolve and the soup thickens, approximately 1 1/2 hours. Remove and discard the bay leaves, then season with pepper.
