Simple vegan chocolate pudding made with just coconut milk and chocolate. Indulgent and suitable for dairy-free and paleo diets.
Ingredients:
  • 1 (15-ounce) can full-fat coconut milk
  • 10 ounces dark chocolate (60-70%), finely chopped
  • 1 tablespoon vanilla extract (optional)
  • Optional garnishes: Whipped coconut cream, shaved chocolate, berries or other fresh fruit
Instructions:
  • Prepare the coconut milk: Shake the can well, then pour it into a saucepan over medium heat. Simmer and stir frequently until it almost boils, then remove from heat.
  • Integrate the chocolate: Gradually fold in one-third of the chopped chocolate into the warm coconut milk. Gently mix until the chocolate is fully melted, creating a velvety consistency. Repeat this process twice more with the remaining chocolate. Optionally, incorporate the vanilla extract for additional flavor.
  • Transfer the pudding into individual jars, glasses, or ramekins, cover with cling film, and let it chill in the refrigerator for a minimum of 4 hours.
  • Before serving, take it out of the refrigerator 30 minutes beforehand. Add your favorite garnishes or simply enjoy it with a spoon.
