Indulgent vegan chocolate pudding made with creamy soy milk and basic pantry staples - a decadent treat for two.
Ingredients:
  • 3 tablespoons cornstarch
  • 2 tablespoons water
  • 1.5 cups soy milk
  • 0.25 cup white sugar
  • 0.25 cup unsweetened cocoa powder
  • 0.25 teaspoon vanilla extract
Instructions:
  • Combine cornstarch and water in a small bowl until a smooth paste is achieved.
  • In a large saucepan, mix together soy milk, sugar, cocoa, and vanilla. Stir in the cornstarch paste until fully incorporated. Cook over medium heat, stirring constantly, until it comes to a boil. Keep cooking and stirring until the mixture thickens, which should take about 3 to 5 minutes.
  • Take the pudding off the heat and allow it to cool for 5 minutes to thicken. Cover and refrigerate until chilled, which should take about 1 to 2 hours.
