Indulge in a velvety garlic-infused vegan potato side dish for your festive meal.
Ingredients:
  • 4 pounds potatoes, peeled and cut into chunks
  • 4 cups water
  • 2 cups vegetable broth
  • 4 cloves garlic, thinly sliced, or more to taste
  • 1 cup rice milk, or as needed
Instructions:
  • In a pot, mix together potatoes, water, broth, and garlic. Bring to a boil, then simmer over medium-low heat until potatoes are tender, around 15 minutes.
  • After draining the potatoes, keep the cooking water aside. Put the potatoes back in the pot and cook over medium heat, stirring, until any extra moisture evaporates, approximately 1 minute.
  • Take the pot off the heat. Stir in small amounts of reserved cooking water and rice milk alternately while stirring vigorously. Stop before potatoes get too soggy or excess liquid gathers in the pot.
