Simple veggie & tofu stir-fry

Delicious and easy two-serving stir-fry recipe.
Ingredients:
  • 2 tablespoons cashew nuts
  • 3 tablespoons sesame seeds
  • 175 g firm tofu
  • 1 teaspoon cornflour
  • vegetable oil
  • runny honey
  • 2 cloves of garlic
  • 5 cm piece of ginger
  • 4 spring onions
  • 2 fresh red chillies optional
  • ½ a head of broccoli
  • ½ a red pepper
  • 4 baby sweetcorn
  • 80 g sweetcorn
  • 1 lime
  • low-salt soy sauce
Instructions:
  • Heat a frying pan or wok over high heat. Add cashew nuts and, 30 seconds later, add sesame seeds. Toss for another 30 seconds until golden, then transfer to a bowl. Cut tofu into cubes and coat with cornflour, salt, and pepper. Heat oil in the pan over medium-high heat. Fry tofu until golden and crisp, then remove from pan and drain on paper towels. Drizzle warm tofu with honey and sprinkle with nuts and seeds. Peel and slice garlic and ginger, slice spring onions and chillies, if using. Cut broccoli into florets, slice the pepper, and halve sweetcorn lengthwise. Reheat pan, add garlic, ginger, spring onions, and chillies. Stir-fry for 30 seconds until garlic is golden. Add vegetables and stir-fry for 4 minutes. Squeeze in lime juice, a splash of soy sauce, and serve vegetables in bowls topped with crispy tofu. Serve with lime wedges and chilli sauce for extra heat.
