Chef John's easy oven-roasted artichokes highlight their natural flavor.
Ingredients:
  • 4 large whole artichokes, top 1 inch and stems removed
  • 0.25 cup olive oil
  • 4 cloves garlic, cloves peeled and crushed
  • kosher salt
Instructions:
  • Preheat the oven to a toasty 425°F (220°C).
  • Arrange artichokes stem-side down in a bowl and generously drizzle with zesty lemon juice.
  • Gently spread apart the artichoke leaves using your hands, then use a knife to make a small space in the center of each artichoke about the size of a garlic clove.
  • Drizzle olive oil over each artichoke, gently press 1 clove of garlic into the center of each, and season with salt.
  • Wrap each artichoke snugly with two layers of durable aluminum foil, then transfer them to a baking dish.
  • Bake in the hot oven until bubbly, for approximately 1 hour and 20 minutes.
  • Serve while piping hot and savor every bite!
