Sinful Chocolate Biscotti

Indulgent chocolate biscotti with rich cocoa, chocolate chips, and hint of espresso - perfect with a warm cup of coffee on chilly days.
Ingredients:
  • 1 tablespoon vanilla extract
  • 1 tablespoon instant espresso powder
  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup mini chocolate chips
  • 1 cup white sugar
  • 3 eggs
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and line 2 baking sheets with parchment paper.
  • Mix vanilla extract and espresso powder in a small bowl until the espresso powder is fully dissolved.
  • Combine and sift together flour, cocoa powder, baking powder, and salt in a bowl; stir in chocolate chips.
  • In a large bowl, vigorously blend the vanilla mixture, sugar, eggs, and oil. Incorporate the flour mixture; mix until a thick and stiff dough forms, using your hands if necessary.
  • Divide the dough into 2 equal portions and transfer them to the baking sheets. Shape each portion into a log the length of the baking sheet; gently press down with moistened hands until it reaches 1/2 inch thickness.
  • Bake in the preheated oven for 25 minutes until firm. Let cool for 5 minutes until easily handled.
  • Transfer the cooled logs onto a cutting board and use a serrated knife to slice them into 1/2-inch rounds. Place the rounds back on the baking sheets, positioning them on their sides.
  • Bake for 6 minutes on each side until perfectly crispy. Cool on wire racks until completely hardened.
