Ingredients:
  • 1 tablespoon vegetable oil
  • 2 lb boneless beef sirloin, cut into 1-inch cubes
  • 1 large onion, coarsely chopped (1 cup)
  • 1 medium green bell pepper, coarsely chopped (1 cup)
  • 2 cans (28 oz each) Muir Glen™ organic diced tomatoes, undrained
  • 1 can (15 oz) pinto beans, drained, rinsed
  • 1 can (15 or 19 oz) Progresso™ black beans, drained, rinsed
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon chili powder
Instructions:
  • Heat oil in a 4-quart Dutch oven over medium-high heat. Brown 1 pound of beef at a time, stirring occasionally, then remove from the Dutch oven.
  • Place the onion and bell pepper in the Dutch oven and sauté for 2 to 3 minutes until they are perfectly crisp-tender. Then, add all the remaining ingredients except for the beef.
  • Cover the pot and let it simmer over medium heat for 10 minutes. Then, stir in the beef and continue cooking uncovered for 3 to 8 minutes until the beef is tender.
