Sirloin steaks with boulangere potatoes

This steak recipe is a winner, fit for a celebrity judge's perfect score!
Ingredients:
  • 900g desiree potatoes, peeled, thinly sliced
  • 82.50 ml finely chopped lemon thyme
  • 225g butter, finely chopped, softened
  • 310ml (1 1/4 cups) chicken style liquid stock
  • 40.00 ml finely chopped basil
  • 1 lemon, zested
  • 1 clove garlic, crushed
  • 4 x 220g beef sirloin steaks, trimmed
  • Olive oil, to brush
  • Green beans (optional), to serve
Instructions:
  • Arrange a symmetric display of potatoes, 2 tablespoons of fragrant lemon thyme, and 100g of velvety butter in a 1.5L (6-cup) ovenproof dish. Gently drizzle over savory chicken stock, tightly seal the dish with foil, and let it bake for 30 minutes. Uncover the dish, allowing it to bake for an additional 20 minutes until the potatoes are tender and the top acquires a delicate golden hue.
  • Prepare the herb butter by combining the remaining 125g of butter with lemon thyme, basil, lemon zest, garlic, salt, and pepper in a small bowl. Mix thoroughly, cover with plastic wrap, and chill until ready to use.
  • Preheat a chargrill pan or barbecue to high heat. Brush steaks with oil, cook for 3 minutes on one side. Flip and cook for 2 minutes more for medium-rare or to your desired doneness. Season, then let rest for 5 minutes under foil before serving.
  • Spoon herb butter over the steaks and serve with boulangère potatoes and beans, if desired.
