Mediterranean-inspired sirloin steaks with tomato, basil, and feta cheese.
Ingredients:
  • 4 beef sirloin steaks, trimmed
  • 6 roma tomatoes, halved
  • 2 tsp baby capers
  • 62.50 ml basil leaves
  • 175g Greek fetta, crumbled
  • 4 whole garlic cloves, skin on
  • 20.00 ml balsamic vinegar
  • 36.40 gm olive oil
  • salt and cracked black pepper
  • olive oil spray
Instructions:
  • Preheat your oven to 200°C. Arrange tomatoes on a baking tray lined with parchment paper, then sprinkle capers, garlic cloves, and crumbled feta on top.
  • Drizzle half of the oil and sprinkle with salt and pepper. Roast for 15 minutes until the tomatoes are tender. Set aside.
  • In a non-metallic bowl, coat the steaks with the remaining oil, vinegar, salt, and pepper. Cover and chill in the refrigerator for five minutes before proceeding.
  • Preheat a grill pan over high heat and sear the steaks for 4 minutes on each side, or until they reach your desired level of doneness.
  • Top the juicy steaks with roasted tomatoes, tangy capers, fragrant garlic, and creamy feta before finishing off with a sprinkle of fresh basil leaves.
