Celebrate Dad with succulent steaks.
Ingredients:
  • 200g penne rigate
  • 62.50 ml balsamic vinegar
  • 4 (150g each) beef sirloin steaks
  • olive oil cooking spray
  • 250g cherry truss tomatoes
  • 62.50 ml small fresh basil leaves
  • 50g baby rocket
Instructions:
  • Boil pasta in salted water following packet instructions until tender. Drain and transfer to a bowl. Mix in 1 tablespoon of oil and toss to combine.
  • In a large glass or ceramic bowl, mix together vinegar, the rest of the oil, and half of the garlic. Add the steak and coat it evenly by turning it in the mixture.
  • Prepare a barbecue plate or chargrill by lightly spraying it with oil and heating it over medium-high heat. Cook the steaks for 3 to 4 minutes on each side for a medium cook or until they reach your desired level of doneness. Transfer the cooked steaks to a plate, cover them with foil, and let them stand for 5 minutes before serving.
  • Sauté tomatoes until soft, 2-3 minutes.
  • Combine tomatoes, basil, rocket, and the rest of the garlic with the pasta. Season with salt and pepper, then mix well. Serve the steaks alongside the pasta salad.
