Enjoy a savory grilled beef entrée with zesty cilantro-jalapeño relish in only 25 minutes - a perfect blend of Southwestern flavors!
Ingredients:
  • 1 cup loosely packed fresh cilantro
  • 1 small onion, cut into quarters
  • 2 cloves garlic, cut in half
  • 1 jalapeño chile, cut in half, seeded
  • 2 teaspoons lime juice
  • 2 teaspoons oil
  • 1 1/4 teaspoons salt
  • 2 teaspoons ground cumin
  • 1/2 teaspoon pepper
  • 4 beef sirloin steaks, 1 inch thick (about 1 1/2 lb)
Instructions:
  • Preheat your grill. In a food processor, combine cilantro, onion, garlic, chile, lime juice, oil, and 1/4 teaspoon salt. Pulse until finely chopped. Add 2 to 3 teaspoons of water to achieve your desired sauce consistency. Transfer the sauce to a small bowl and set aside until ready to serve.
  • In a small bowl, mix cumin, pepper, and the remaining 1 teaspoon of salt. Rub the mixture evenly over the steaks. Place the steaks on the grill over medium heat. Cover and cook for 7 to 10 minutes for medium-rare (145°F), turning once halfway through.
  • Drizzle each steak with 2 tablespoons of flavorful chimichurri.
