Festive Christmas cookies coated in nuts, topped with white frosting, and finished with a chocolate-covered peanut.
Ingredients:
  • 0.5 cup packed brown sugar
  • 2 eggs, separated
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups chopped walnuts
  • 1 (12 fluid ounce) can ready-to-spread vanilla frosting
  • 1 cup candy-coated chocolate peanuts
Instructions:
  • Combine butter and sugar in a large bowl until creamy. Mix in egg yolks and vanilla. In a separate bowl, combine flour and salt, then gradually mix into the creamy mixture. Cover and chill in the fridge for at least 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). Form the dough into 1-inch balls, dip them in lightly beaten egg whites, and coat them with chopped walnuts. Arrange the coated balls 1 inch apart on baking sheets.
  • After baking cookies for 5 minutes, gently press your thumb into the center of each one, then bake for an additional 5 minutes. Transfer the cookies to wire racks to cool, and top each with frosting and a chocolate-coated peanut.
