Whip up a quick and flavorful one-pan meal with Italian seasoned beef, veggies, and brown rice.
Ingredients:
  • 2 cups Progresso™ beef broth
  • 1 1/2 cups uncooked instant brown rice
  • 2 medium carrots, sliced (1 cup)
  • 2 teaspoons vegetable oil
  • 1/2 pound beef top round steak, trimmed of fat and cut into thin strips
  • 1/4 cup chopped onion
  • 1 cup fresh snap pea pods, strings removed
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon pepper
Instructions:
  • Bring the broth to a boil in a 2-quart saucepan. Add rice and carrots, then bring back to a boil. Reduce heat, cover, and simmer for 6 to 8 minutes until carrots are crisp-tender. Remove from heat and let it stand for 5 minutes before serving.
  • Heat oil in a large skillet over medium-high heat. Cook beef and onion for about 8 minutes, stirring frequently, until beef is browned and onion is tender. Stir in cooked rice, pea pods, Italian seasoning, salt, and pepper.
  • Cook the pea pods, stirring occasionally, for about 3 minutes until they are just tender. Add a splash of water if the mixture becomes dry before the pea pods are cooked to perfection.
