Cajun Beef and Rice

Savory Cajun skillet meal with rice, veggies, and beef - ready in minutes.
Ingredients:
  • 1/4 pound extra-lean ground beef
  • 1 small stalk celery, chopped (1/4 cup)
  • 1 small onion, chopped (1/4 cup)
  • 1 teaspoon Cajun seasonings blend
  • 1 cup uncooked instant rice
  • 1/4 cup chopped green bell pepper
  • 1/2 cup water
  • 4 medium fresh or 1/2 cup frozen (thawed) okra, sliced
  • 1 medium tomato, chopped (1/2 cup)
  • 1 can (11 1/2 ounces) lightly tangy eight-vegetable juice
Instructions:
  • Preheat a 10-inch nonstick skillet over medium-high heat. Sauté ground beef, celery, onion, and Cajun seasoning blend, stirring occasionally, until beef is browned and vegetables are tender, about 4 minutes.
  • Mix in all the remaining ingredients, then lower the heat to medium-low. Cover the pot and simmer for 5 minutes, or until the rice is tender.
