Spicy beef and cabbage casserole with a kick, made with tomatoes and rice.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) can diced tomatoes with mild green chilies, undrained
  • 1 (8 ounce) can tomato sauce
  • 0.5 cup long grain rice, uncooked
  • 1 teaspoon salt
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon ground cayenne pepper
  • 0.25 teaspoon ground white pepper
  • 0.25 teaspoon ground black pepper
  • 1 small head cabbage, chopped
  • 1 cup shredded Colby cheese
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, sauté beef, green pepper, onion, and garlic until beef is no longer pink and vegetables are softened, about 8 minutes. Drain excess liquid from the pan.
  • Mix together tomatoes, tomato sauce, rice, salt, basil, oregano, cayenne, white pepper, and black pepper, adjusting the amount of pepper to your liking. Transfer the mixture into a 9x12-inch baking pan without greasing it. Layer cabbage and Colby cheese on top before baking.
  • Bake, covered, in a preheated oven for 65 to 75 minutes, or until the rice is tender.
