Spicy Creole sausage and cabbage soup, served with sourdough bread and extra salsa on the side.
Ingredients:
  • 2 tablespoons butter
  • 3 leeks, halved and thinly sliced
  • 0.5 onion, chopped
  • 3 cloves garlic, minced
  • 3 stalks celery, diced
  • 3 carrots, diced
  • 1 small head cabbage, and thinly sliced
  • 3 cups water
  • 1 cup salsa
  • 0.33333334326744 cup ketchup
  • 4 cubes chicken bouillon
  • 2 teaspoons Creole seasoning (such as Tony Chachere's®), or more to taste
  • 0.5 pound smoked sausage, thinly sliced
Instructions:
  • In a large Dutch oven or heavy stockpot, melt butter over medium heat. Sauté leeks, onion, and garlic until softened, for about 5 to 10 minutes. Stir in celery and carrots, cook for 3 to 4 minutes. Finally, add cabbage and cook until slightly tender, which should take around 5 minutes.
  • Combine water, salsa, ketchup, bouillon cubes, Creole seasoning, salt, pepper, and vegetables in a pot. Bring to a boil, then lower heat and simmer for 20 minutes for flavors to blend. Add sausage and simmer for an additional 20 minutes until cooked through.
