Skillet Chicken and Dumplings

Effortlessly whip up delicious chicken and dumplings using tender chicken breasts in a skillet.
Ingredients:
  • 1 tablespoon vegetable oil
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 2 cans (10 3/4 oz each) condensed 98% fat-free cream of chicken soup
  • 1 bag (1 lb) frozen stir-fry vegetables
  • 1 cup Original Bisquick™ mix
  • 1/3 cup milk
  • 1/4 teaspoon dried tarragon leaves
Instructions:
  • Heat oil in a 10-inch skillet over medium-high heat. Cook chicken for about 5 minutes, turning once, until it begins to brown.
  • Combine the soup and frozen vegetables in a pot, bring to a boil while stirring occasionally.
  • Combine all dumpling ingredients in a small bowl until a soft dough forms. Spoon 4 dollops of the mixture into the boiling chicken. Reduce heat and cook uncovered for 10 minutes. Cover and continue cooking for an additional 10 minutes.
